SWEET SAFFRON AND LEMON TEA

This is such a simple recipe and a good variation to the standard warm water and lemon. The added spices assist with digestion and enhance dosha balance. Plus, it's simply delicious. This tea is designed for Autumn/Winter health and contains the tastes of astringent, pungent, sour and sweet. For Kapha types, add some freshly grated ginger for extra stimulating heat. For Pitta constitutions, add less lemon and honey.



WHAT YOU WILL NEED


  • 1 tbs cardamom seeds

  • ¼ tsp saffron

  • 1 tbs fennel seeds

  • Zest of 1 lemon

  • 1 tbs raw honey or maple syrup



METHOD


  1. Boil approximately a litre of water, with the spices and lemon zest for 5 minutes in a medium sized saucepan.

  2. Remove from heat, let stand to cool and stir in honey or maple syrup.

  3. Strain spices (if you prefer) and enjoy!
