Simple rice and vegetables is the ultimate recovery food, next to a basic Kitchari. Basmati rice is one of the easiest grains to digest for all body types, creating a Sattvic or completely harmoniously eco-system in the stomach and digestive tract. Added with fresh vegetables and digestive spices, this recipe can be used to recover from illness, over-indulgent festive seasons or surgery. Better yet, from start to finish this recipe will take you 20 minutes, holds around 4 servings and is all done in one pot. It is a very simple food, more designed for healing and nourishment than intense flavour. It is also a wonderful recipe to get your little ones started on solid foods. You can fold through a 1/2 teaspoon of ghee or coconut oil while the rice is still warm, making it deliciously nourishing for young tummies.
WHAT YOU WILL NEED
1 cup organic basmati rice
1 tsp cumin seeds and coriander powder
1/2 tsp ginger powder and turmeric powder
1 cup fresh seasonal vegetables finely chopped
Pink Himalayan rock salt and freshly cracked black pepper to taste (you can omit the pepper if feeding young ones)
3 cups fresh water
METHOD
Combine all ingredients well in a medium sized saucepan.
Cover with a lid and bring to the boil.
Immediately lower the temperature to a gentle simmer for approximately 20 minutes until the rice and vegetables are cooked and much of the water is absorbed. Throughout cooking, take the lid off every 5-6 minutes to lightly stir and combine ingredients.
Serve immediately with the oils mentioned above for children.
